Thanksgiving is a day dedicated to gratitude—taking time to give thanks for what you have and giving back. It’s also one of the most wasteful days of the year. Americans throw away around $165 billion of uneaten food each year, and $293 million of that comes from discarded turkey on Thanksgiving alone—and that’s not even including the side dishes and desserts, according to a study by Harvard Law School’s Food Law and Policy Clinic and the Natural Resources Defense Council.

So what do you do with all those leftovers when you can’t stomach the thought of another serving of turkey, mashed potatoes, or stuffing? Easy: turn them into something else.
